vCenter Server - where to install

Okay so I'm brand new to VMware, Virtualization, etc and I have what is hopefully some simple questions. First my layout.

 

I have 2 Dell T320 PowerEdge Servers that came with ESXi 5.1 installed on each.

I have a Synology DS1513+ NAS Storage device for storing all my virtual machines.

 

I'm in a manufacturing facility so for my production system to work I need 2 virtual servers, both Windows Server 2008 R2 Standard, and using remote desktop services this will deploy applications and virtual machines to thin clients around the plant floor.

I will also be adding about 4 virtual machines running Windows 7 Pro for workstations.

 

I've purchased the VMware vSphere Essentials Bundle so when I go to download I have the following options:

VMware ESXi 5.1 (which I believe is the same software already on my Dells)

VMware vCenter Server 5.1 (which I believe is what I need to install)

VMware vCenter Operations Manager Foundation (which I believe gives me more features)

 

Does that all sound good so far?

 

So now my questions:

1) where should I install the vCenter Server software? Can it go on 1 of my virtual servers with Windows Server 2008 R2?

2) does Windows Server 2008 R2 have to be setup as a Domain?

3) can vCenter Server be installed on a non-Server operating system like the Win7 Workstation virtual machines I'm also creating?
